由崔晓翠、杨野编著的《高星级酒店服务英语(国家中等职业教育改革发展示范学校建设成果系列教材)》共设五个模块,即前厅服务(Front Office)、餐饮服务(Food and Beverage Service)、客房服务 (Housekeeping)、其他服务(Other Sen,ices)和服务礼仪(Service Etiquette)。每个模块又按照工作任务和流程,分设项目,以任务为引领实现每个项目要求。每个任务由情景描述、情景分析、服务语言呈现、重点单词和词组、关键句型、练习和知识拓展组成。每个项目后设有学生学习成果评价表,评价表以过关形式呈现,每关设有自评、组评、师评和他评等多元评价模式,学生通过一关评价后,才能进入到下一关学习。每个项目通关后,有模块综合评价,综合评价在过关评价的基础上增加企业评价,完成所有评价后,学生获得项目成绩。每个项目成绩换成学分累计,作为终结评价的内容,占终结评价的70%。过程评价与终结评价相结合让中职学生在学习的每个过程中,感受成功,建立自信,提高学习兴趣。
